Traditional Tomato Soup
This cozy traditional tomato soup is simple, comforting, and full of bright tomato flavor. It is an easy homemade recipe for a weeknight lunch or a relaxed dinner with crusty bread.
Ingredients
2 tablespoons olive oil; 1 medium onion, diced; 3 garlic cloves, minced; 2 cans (28 ounces total) crushed tomatoes; 3 cups vegetable or chicken broth; 1 teaspoon sugar; 1 teaspoon dried basil; 1/2 teaspoon salt; 1/4 teaspoon black pepper; 1/2 cup cream, optional; fresh basil and crusty bread for serving.
Directions
1. Prepare the ingredients. Dice the onion, mince the garlic, and gather the tomatoes, broth, and seasonings.

2. Build the flavor. Warm the olive oil in a large pot over medium heat. Add the onion and cook for 5 minutes until softened. Stir in the garlic and cook for 30 seconds.

3. Simmer. Add the crushed tomatoes, broth, sugar, basil, salt, and pepper. Bring to a gentle simmer, then cook uncovered for 20 minutes, stirring occasionally.

4. Blend until smooth. Carefully blend the soup with an immersion blender, or blend in batches in a countertop blender. Stir in the cream if using.

Helpful Tips
For a richer soup, use roasted tomatoes or add a small pat of butter at the end. For a dairy-free version, leave out the cream. Store leftovers in the refrigerator for up to 4 days and reheat gently.
